Easy as Apple Pie
Been feeling guilty about the apples which are clinging onto the branches despite the wind so made an apple pudding which is ridiculously easy + incredibly delicious and a little bit indulgent with a cup of coffee mid-morning.
You will need:-
four eating apples
Shop-bought puff pastry
1/2 pack of unsalted butter
100g brown sugar - I used muscovado
125ml double creamPreheat oven to pasty packet instructions
Take pastry from the fridge + when at room temperature it will roll out much better
Peel, core, and slice apples + pop into a pan of boiling water for two minutes. Drain and set aside.
On top of grease proof paper roll out pastry into 25cm square - you don’t need to exact here + if you get unexpected guests you can roll it larger to accommodate.
Put butter, and sugar into a pan over low heat. When melted add double cream + stir until you have a lovely, runny toffee consistency. Set aside.
Score the pastry in a square a couple of centimetres from the edge the whole way around.
Arrange the apple evenly on top of the pastry.
Spoon over the toffee sauce.
Pop into the oven - takes approximately 15/20 minutes. Serve with ice cream or double cream. Enjoy
